Tasting Menu (or multi-course options) with nightshade & soy allergy

Going to be in NYC in September (assuming this mass vaccination thing sticks), staying near Union Square. My partner is allergic to soy and nightshades. She can generally find options in most American or European cuisines, but I'd like to do one nice long sit-down dinner where she can have a tasting menu or multiple courses. Any suggestions on places that would accommodate?

Location: anywhere within an optimistic ~20-minute Lyft of Union Square. So most of Manhattan, or the Western edge of Brooklyn.

Budget: Flexible.
