Taste of reduced vinegar...

Hi I was wondering if you guys could describe to me what happens to the taste of reduced vinegar. Like wine, reduced vinegar will lose its harshness and and acidity and become sweeter as it reduces, right? I'm making a compote with balsamic vinegar, and I really want the harsh bite and acidity to still be there from the vinegar. So it's better to add the vinegar at the end instead of cooking it out, right?
