a few months ago i had a really wonderful dinner with a true chow hound (and the hound's delightful spouse.) one thing i became aware of is that the hound was very much attuned to the component flavors of each dish, while my own pallet is more aware of the whole flavor of the end product. Now I'm not saying that the hound was in any way unaware or unappreciative of the sum of the parts. And when I cook I know what needs to be added to balance the flavors. But when a dish is prepared for me, I don't immediately say, "wow, i never would have thought of adding peanut butter to pulled pork, its really good." (yes, i just made that up.)
so is my ignorance bliss or am i really missing out?
