Hello everyone. Over the past few weeks I've been exploring the topic of TASTE quite a bit. I wrote this post to take a look at why the things we love taste so great.
The answer? Contrast.
By contrasting the primary tastes, you can easily create food that is interesting - not just for the first three bites, but for the last bite as well.
Here's an example of something delicious I made recently that has a lot of flavor (and texture) contrast
Soft parmesan polenta, with a spicy tomato sauce and fried calamari ontop.
All together it was a great marriage of spicy, creamy, cheesy, tangy and crispy goodness.
