Another late report from my time in Redding during last year's Carr Fire . . . After buying Furnari sausage, I headed over to the nearby then one-year-old ice cream shop in the alley co-located with Cinders wood-fired pizza. When forced to shut down, the creamery delivered Ice cream to the shelters. First responders in uniform were given a free cone and evacuees, a 50% discount.

Crystal Dairy makes the ice cream base. It was interesting to mention this spot to some of the folks I'd befriended in Redding, all of them saying that this was considered kind of avant garde in flavor combinations. I tasted Peanut butter & berry jam, Lavender honey, and Balsamic roasted strawberry. I ended up with a split single of Creme fraiche with strawberry compote and Bourbon brown butter pecan, $4, plus a buck supplement for the waffle cup (or cone). Really, really great waffle --- thin and crispy through and through, beautifully browned and so buttery tasting. The tartness of the creme fraiche helped balance the candy sweetness of the compote. The butter was deeply browned in flavor, and I admire the willingness to take it that far to get this result. I also liked the distinctly salty character, satisfying my salt craving again.

Liked it so much, I returned the next day after dinner for another pairing, Blueberry goat cheesecake plus Theory Collaborative coffee ice cream. Good stuff.
