"Taste As You Go" without burning your mouth?

I prefer my sauces and soups a bit on the thicker side, so I tend to cook mine down until the flavor is concentrated. Sometimes the flavor is a little TOO concentrated though, and its up becoming bitter.

My parents lecture me that I need to use a spoon to sample the food and "taste as I go" but the food is just too dang hot, even after blowing on it! How do you all cope with this?
