I've been reading this book about the history American cousine called "Taste of America" by Karen Hess, which follows the industrialization of American food into a bland Wonder bread wonder. The book was written in the 70's, and it got me thinking about how much has changed in America. Recently there's obviously been a foodie revolution. From celebrity chefs to this very site, good food for pleasure, not just fuel for energy, seems to quite hip these days.
But why now? What do you think this is about?
