I would like to order some Tasso at a local Butcher shop in Sacramento. The butcher is a German man, born and raised in Peru, however quite good at what he does.
I have tasted his Tasso and it is way too hot for my taste.
My special order to him, which I would share with a number of friends, would stipulate a lot less heat.
Does anyone perhaps have a recipe so I can see if his Tasso is in te ball park. Or does anyone have a tip on where else to order it.
