Taqueria Sanchez lunch today....mixed bag.

After reading a few of the posts on here I went there for the first time today and walked out with 4 tacos. As usual my eyes were bigger than my stomach. Ended up with lomo, cabeza, pastor, and asada and all the little sauces. The tacos were still piping hot when I got home ..so hot still that I couldn't quite grab them with my bare hands. The cabeza was very meaty, juicy, tender, with a good beefy flavor and cooked to perfection with a nice fat to meat ratio going on...BUT way too SALTY. Totally bummed!! If it weren't for the saltiness I think I could have declared it the best cabeza taco I've had so far. The lomo and asada tasted like it was missing something...tasted a tiny bit "flat" as did the salsa roja. The pastor was very moist and cooked just right, but again, too salty~! I went right at lunch time...is this normal for TS? Is this a timing thing? I'm still thinking about how the cabeza woud have been perfect if only........
