I want to make this south Indian dish. The recipe on the (Kalustyan's) package of large tapioca pearls (Sabudana) doesn't mention soaking them before beginning. That seemed odd to me. I thought they had to be soaked in advance or they would be somewhat hard. Anyway, here's the recipe from the package:
"Melt butter in saucepan, add tapioca, fry over low heat for a minute, add milk (8 cups/cup of tapioca), and cook tapioca (covered) over low heat for 5-7 minutes, stir frequently, add cardamom, saffron, sugar & nuts, stir and cook 5 more minutes, serve."
Maybe I need to soak and then just drain the pearls, before frying them? I have only made a tapioca dish once before and I remember incorporating the soaking liquid. But maybe it isn't necessary to do that.
