This is a head's up to a discussion in progress on the General Topics board about this school of Chinese cooking. Nancy Berry and Gary Soup, from this community, have kindly jumped in with their comments already, but I'm posting here in case anyone else has info to add. The local restaurant I have in mind is China Village in Albany.
