Mexican Tamales

What are the most preferred fillings? pork, beef chicken, turkey etc.etc, in the USA as well as certain regions in Mexico? Thank you.

      Here in Central California it's mostly pork. My father-in-law is from Chihuahua, and taught me his techniques. We usually buy the masa, but make everything else, including the sauce. When we run out of pork, we simply insert a roasted chili pepper and cheese. We tend to make a lot.

        In New Mexico, USA, where I am, the most popular filling by far is red chile pork. Green chile/cheese, which often has fresh corn mixed into the filling, is popular too. And chicken filling and black bean filling make appearances now and again. Beef-filled tamales are on most restaurant menus here, made with either shredded or ground beef, but I don’t see people making those at home.
