I've been cooking Mexicam food for many years and have made some good Tamales in my time. I want to try to make them Southern US/Mississippi Style. The "Red Hots" of Barbecue country.
I don't know where to begin.
Do they use Masa Harina or plain corn meal?
Is the meat filling left over Barbecue, a ground beef mixture or what?
Are they wrapped in corn leaves or tin foil?
I promise to treat any recipes respectfully as I am aware that I may be stepping on some proud traditions.
