tamale follow up questions

I tried and failed and after getting some great trouble shooting advise from y'all I have just two burning questions:

Will tying or folding both ends yield a better tamale? Explain please.

How do I prepare fresh masa dough for tamales? I mean to say masa that has been ground, mixed with water and with no fat added. I found this at Chicago Supermarket here in Atlanta.
