Can someone please tell me the difference between the thick (organic) tahini I bought at Whole Foods (only ingredient is sesame seeds) and the lighter coloured, thinner tahini that gets squirted on my falafel at the local Middle Eastern restos? I've been incorporating tahini into some of my recipes lately but I find the thick stuff a bit difficult to work with so I'm wondering if the other sauce is thinned with oil, water or something different altogether. Thanks.
