taco truck/taqueria recipes

hi yall -

i've just scarfed down three perfect tacos from the "acevedes tacos truck" at market & 3d over here in west oakland, and this has made me sad. why? because i'm moving to melbourne, australia, where there isn't any decent taqueria-style mexican food, much less a taco truck, for about 8,000 miles.

i'm moving in about a month, which doesn't leave me much time to research this, but i'm hoping some of you might have favorite recipes for al pastor, carnitas, carne asada and pollo, salsa, etc, that approximate some of the better taquerias and taco trucks in the bay area. other good mexican/latino recipes for mole or other dishes are most welcome. not so into the brains and the toungue.

don't get me wrong - melbourne has fantastic chow - but as a 30-year resident of the bay area i know i'm gonna miss my al pastor almost as much as i'll miss my mom.
