Taco Truck Ensenada, Vallejo

Luck smiled upon me tonight --- found another GOOD taco truck in Vallejo. This one is on the corner of Springs and Maple (just east of Hwy. 80) in the U-Haul parking lot and has some covered seating. It’s owned by Ensenada Restaurant in Benicia and is open from 10am to 8pm.

I ordered a sampling of tacos ($1 each) to test the quality of the meats. Lengua (tongue), carnitas, and when undecided on the third, I asked for a recommendation and got an enthusiastic response that the al pastor is what they’re known for. Good job all round – buttery soft lengua, greaseless shredded style of carnitas, and the al pastor was as yummy as promised with flavorful nonsweet marinade, firm texture and grilled depth of flavor. The lengua and carnitas were dressed with a mild and undistinguished salsa verde. The al pastor had a smoky roasted tomato salsa with a good amount of heat that gave it just the right punch. The tacos were topped with fresh cilantro and chopped onions, and accompanied by pickled jalapeño chilis, carrots, and fresh radishes. Good stuff.
