Has anyone here switched to a mostly Asian diet, from a typical American one?

If so, I would be really interested to know how you went about it, and any informative resources you may have.

I've been interested in it for quite some time now, and I'd really like to push myself to start making that change soon. Firstly for a few health reasons (I do have some health conditions, and I have noticed more and more that many ingredients used in some of these cuisines are helpful towards those conditions.) Secondly, I just love many of the ingredients and foods, the techniques, and just the simplicity of many dishes. Third? Well, I wake up craving miso soup, lol.

I'm really interested in simple Japanese cooking, and authentic, more "down home" type Chinese cooking (like braised dishes, stews, etc.) Along with some Thai and Filipino cooking.

Problem #1 is...I'm the only one eating it (except maybe once in a while, my ultra-picky meat-and-potatoes type husband eats certain dishes like my chicken adobo.) So that makes it a little more difficult, and when making multiple meals, I really want to keep them simple because otherwise it gets too overwhelming.

Problem #2 is....location. This is really my big obstacle. I am seriously out in the middle of nowhere. Any Asian grocer is at least an hour and a half away probably. Which really makes me sad, because I would love to browse these places. I'm not sure if I'm better off making the trip to these places and stocking up (maybe getting a separate freezer?) or just ordering all my ingredients on multiple sites online, and paying all the separate shipping charges.

Our Asian restaurants here are your typical, run of the mill Americanized takeout places...the same type of stuff I've been exposed to most of my life. My favorite one here is a little better than the rest, and I tend to order more soups and plain meat/vegetable/white rice dishes instead of the breaded/fried/syrupy sweet sauce stuff. It's slightly better than others here, but still nothing compared to what many here living in cities have access to. I do have an authentic Northern Chinese/dumpling place nearby that I have been meaning to's definitely a rarity in these parts.

Any advice would be very welcome. I've been planning ingredient lists, equipment lists, and everything, but it gets difficult when I have to go to so many different websites to get them all. I'm also planning a small Asian ingredients garden next spring with ingredients that are hard to find here....lemongrass, Thai basil, Chinese cabbage, galangal, Shiso, etc....even growing my own sprouts since I can't find them fresh here any longer.

Oh yeah, and I'm now living in a landlocked area. :( So fresh seafood is mostly out of the question unfortunately. (However I am interested in raising my own fish and perhaps doing hydroponics eventually!)
