I much prefer pancreas sweetbreads to thymus. Lately I've found it very difficult to find sweetbreads made from pancreas. I also think it's a little misleading when restaurants make you ask what variety you're getting, since there's a great difference in taste. Does anyone know of a good place to find pancreas sweetbreads in Manhattan? Thanks in advance.
