Heaven! Picked this up from a meals-on-the-go catering outfit. There were 3 individual mini-roulades. One slice of eggplant and one slice of sweet potato wrapped around creamy goat cheese. I never would have thought of pairing sweet potatoes with the goat cheese but it works. It was served with a puddle of fresh tomato marinara.
Now I have to experiment at home and see how to par-cook the sweet potato so it will bend. This would make a great meal for my veggie friends. Does it appeal to you?
