I was reading a cookbook over the weekend, and there was a fascinating chapter on the sweet pastas of the Renaissance. Apparently, since only the wealthy could afford refined sugars and flours, combining the two seemed a natural way to enjoy delicious food and showcase wealth. Some of the offerings, such as a pasta accompanied by a carmelized sauce including oranges, sounded pretty tasty.
Is there anyplace in New York where these pastas are available? The pasta tasting menu at Babbo did not have a pasta dessert when I checked.
