Years ago I ate a dish of sweet, crispy, fried spinach at what I vaguely remember was a fancy Chinese restaurant in Ottawa's Byward market. I was a child at the time (maybe 12), this dish has haunted me ever since. It was incredible.
It was perfectly crisp, light, airy, spinachy and sweet. A little like the kale chips that are so trendy at the moment , but hot and (have I mentioned?) sweet and spinachy. Also, way tastier than that sounds.
What is this dish? Is it something I could find at a restaurant? Do you have a recipe?
