Less sweet cake frostings?

I'm looking for suggestions for cake frostings that are warm weather tolerant and sturdy enough to support a layer cake but that aren't as wickedly sugary as standard buttercreams or meringues--something that can stand to sit out on the counter for a days' worth of summer and not go all sloppy and that still allows for a nice, tidy slice of layer cake at serving time.

Ideally, I want a chocolate frosting with more volume than just ganache that can support a decently fudgy, dense chocolate cake, and a vanilla or neutral flavored recipe that lends itself to embellishments/flavorings. Cream cheese heavy recipes are out.

What are your favorite less sweet, non dairy intense frosting recipes?
