Swedish Litmus Test

What are some dishes in Swedish restaurants (traditional or upscale) that provide a clear test of the kitchen's aptitude and diligence? The only one I can think of is that the Ärtsoppa / Yellow Pea Soup shouldn't contain stray pea skins (that's true of any great pea soup, but the error's particularly taboo for Swedes). Any others?
