Sweating onions - pressure cooker possible?

Rtldan | Dec 24, 201403:36 AM     1

Hello,
This is my first post on this great forum!
Started making onion gel tonight out of the modernist home cookbook. It called for a ton of onions, and said to sweat them. It took close to an hour! It got me thinking -- has anyone tried sweating onions in a pressure cooker? I just bought a PC a couple days ago, so I'm still trying to figure out creative uses for it.

Your thoughts are appreciated!
-Daniel
