1. I usually get Sushi at Ginko, Blue Ribbon, Osaka and sometimes (please don't yell at me) Faan - are there any other places in Brooklyn I should check out?
2. I know when you sit at the Sushi bar it is customary the give the Sushi Chef a tip - that's about all I understand. Could someone explain how tips are dispersed in a Sushi place - should I always tip the Chef? If I tip the waiter, does the Chef take a portion? If I'm tipping 20%, should I break it down and throw some into the tip cup on the Sushi bar (what percentage)????? Please help, I love Sushi but I don't want to look like a jerk.
