I will work on getting the exact opening date of this new venture of the sushi chef who made Z's Sushi in Alhambra so popular- it's on the corner of Colorado and Lake in Pasadena, and is called Japan Bistro. He will be opening either this weekend or next. Sushi is served at dinner along with other Japanese dishes; lunch features Youshoku- Japanese-style "western" favorites- like Omu-rice (Omelette Rice). He promised that he would include his homemade Kani Cream Coroquettes (crab/cream well, coroquettes!) on the menu so I will definitely have to try those as they are one of my favorites. I think his sushi has always been extremely creative in a subtle and precise way, and I have high hopes for what will be his very first owner/chef venture. I anticipate a very busy first few weeks since I know he has many fans from Z's, but hopefully some of us hounds can get in and give reports.
On a side note: I recently went to Z's after staying away for a while since this chef quit and I wasn't sure if it would remain as good. Well, his successors are just as friendly and creative as he was so it's still at the top of my local sushi list.
