I'm not sure if this is the right forum for this question, but have noticed that a number of people on the board obviously have worked in food, so though you might be able to help...
One of my friends is interested in finding out how one becomes a sushi chef. He's seen info on some intensive programs on the west coast, but so far nothing about the east coast (he's in Boston).
What's the process - does everyone come from Japan or California? Can you "apprentice" yourself to someone in a sushi place here? Go through traditional cooking school channels?
Any input would be greatly appreciated!
