I'm frustrated by the inconsistency of all the sushi places I've tried in (downtown) Chicago ... this could be naivete on my part, but it seems like you just never know what you're going to get. I've been to: Sushi Wabi (probably my favorite), Kamehachi on Wells (mediocre), Kamehachi on Ontario (was fantastic at first, recently *very* bad), Sai Cafe (I've tried this place at least six times, all of them horrible), Matsuya (you shouldn't smell your meal when you walk in), Sushi Samba (good thing it looks cool), Shiroi Hana (I actually can't remember anything at all about this place), Mirai (specials better than the sushi), Bob San (awful), the place just east of Damen on North (something Blue? it was ok), and a few others I can't think of at the moment.
I'm really not expecting something sublime every time, but I'm to the point where I'm no longer eating my favorite meal. I'm wondering 1) am I missing someplace that Chowhounds think is great? and/or 2) is there anything to the idea that fresh fish is only delivered a couple times a week, or at least of sushi quality? This would explain a great deal of inconsistency, as I've not paid attention to which days of the week all the above were.
