Supermarket Packaged Stir Fry Beef: Why Round Cut?

Chemicalkinetics | Nov 19, 201404:25 PM

I am sure that many of you have seen packages of cut beef labeled as "stir fry beef" in your local supermarkets. I particularly noticed them during my college years when I have too much time to compare products. I still noticed them once awhile.

More than often, these packaged stir fry beef are from the round cut. Yet, most Chinese/Asians I know prefer to use skirt steak and flank steak for stir fry as opposed to round.

So what is going on here?

Supermarkets are just ignorant, or supermarkets are fully aware but do not care and round cut is cheaper and easier to sell, or non-Asian American consumers do prefer the round cut for stir fry?
