After reading that discussion (see below) on knife-cut vs hand-pulled noodles, I went to Super Taste @ Eldridge last night with a couple friends. One ordered spicy beef with hand-pulled noodles, another ordered spicy beef/knife-cut whereas I ordered beef/knife-cut *and* pork bone/hand-pulled noodles.
Our consensus preference was the hand-pulled noodles over the knife cut (dao xiao mien). Broth was excellent, not overly fatty tasting, juust right. The beef was okay, nothing sensational and I'd have preferred just a slice of "fresh" eye-of-round like they do in Vietnamese Phos... and maybe one large bone with marrow in it :)
That said, I could live with just the hand-pulled noodles and beef broth. So far, these are indeed the most sublime tasting noodles I've had in Chinatown.
