Noticed that Star Market in Salinas has Sunnyvalley bone-in ham on special again for $1.99/lb. I tried this the last time it was available and we enjoyed it a lot. Both butt and shank half-hams were available for the price. I asked the butcher to cut five 1" ham steaks off for me and vacuum-pack them separately, as well as the remaining shank piece. These have come in handy for making quick meals.
The ham is a traditional cure with nitrates. The cure is only mildly sweet and in balance with salt and smoke notes so that you can actually taste the pork and not just sweet/salty. While it is water-added, the flesh is firm and not mushy or oozing liquid. It did not shrink much. The ham is not fully cooked, so one needs to bring it fully up to temperature. The advantage of this is that the marbled meat stays moist and did not dry out on heating. As can be seen in the photo below, the ham's well-trimmed with just a thin layer of outer fat.
