Can sunchokes be greenish?

jmlehrfeld | Nov 16, 201810:20 AM

I picked up some sunchokes (Jerusalem artichokes) at my produce store today. I had some doubts because they were kind of green-tinged on the outside, the kind of color that would make me throw out a potato. The owner of the produce store told me that meant they were fresh. Part of me didn't believe her but part of me thought, "Who are you to second-guess the owner of a produce store?" Does anyone know the truth to the matter? The green parts are a little spongier than the brown parts.
