Hope all you chowhounds can help me out. My family is getting together for our bi-annual vacation on the Outer Banks in North Carolina. This year we have rented two houses ( Crowd keeps getting larger!), so my house will accomodate 18 of us- 9 adults and 9 kids. The kids range in age from 10-16 and we have no vegatarians or food allergies in our group.
I love to cook, and make the evening meals. Looking for some new ideas. WE usually are back at the house in late afteroon. ( The beach is our backyard!), returning from the beach or the gold course. Quick shower and on to dinner. We usually bring a vegatable platter, cheese, crakers, etc down to the pool to keep the kids occupied, and we have a few cocktails while I prepare dinner. We will have a gas grill. Not sure if we have a slow cooker, but really prefer not to go that route.
We bring a lot of the staples with us, stop at local fruit stands for the fruit and vegatables on the way down ( most of us from Boston Area), and use the local Food Lion for diary and meat when we arrive.
I have ideas and recipes from earlier trips, but am looking for something new. All ideas are welcome- but am really looking for recipe that I can prepare during cocktail time- dont want to miss any beach time.
