Summer dinner for colleagues?

Hi all,

First, I just want to say that I love this board. Everyone always has tremendous ideas!

Second, I'm hosting about 10 colleagues at my house for dinner on Wednesday night. Originally, my menu was going to be ribs, potato salad, coleslaw (or another salad, maybe cucumber/avocado), and cookies for dessert. A few hors d'oeuvres to start, and some pre-made sangria.

But now... I'm kind of having some doubts about the ribs. I was planning to do a dry rub on pork spare ribs and do them low and slow in the oven. Now I'm wondering if this would maybe be too messy for colleagues (though they are friends too).

The issue is that I don't really want to be cooking while people are over. Otherwise I'd be doing burgers and brats, which are an obvious choice for a summer gathering. The ribs can just be crisped on the grill once they're done from the oven, which I suppose is still a bit of cooking.

Anyway! I'd love to hear your thoughts and ideas. Thanks in advance!
