We are having a summer dinner party for 30 at a rented chateau in France. We will arrive 6 days before the dinner. Kitchen is fully equipped. I am not overly impressed with caterers I have seen, but I can get plenty of help to prepare and serve. Because I like to serve high quality food, and there is no guarantee that I can get that at any price from the caterers, I am considering prepping what I can beforehand, and doing it with help. Doesn't need to be complicated, just preps to highlight quality ingredients I can find in Northern France, near the sea. I may do buffet since I have some vegetarians and varied tastes, but want a consistent theme... Thanks to all of you for your thoughts!
