need summer comfort food w/one recipe to share

I am looking for summer comfort food that requires little or no refridgeraion. My gramma's 3 bean salad is a perfect example of what I am looking for.

24 Hour Bean Salad

1 15 oz can green beans
1 15 oz can wax beans
1 15 oz can kidney beans
1 C thin-sliced red onions
1/2 C of sweet pickle juice
1/2 C Apple cider vinegar (best)
1/2 C vegatable oil
3/4 C sugar
1/2 t salt
1/8 t pepper

Mix together and marinate 24 hours.

That is my gramma's original recipe, I sadly have a hard time finding wax beans, and have used corn, canned carrots, frozen peas, even beets, and other substitutions, but the beet juice colors the whole salad. Sometimes I add corn with the three beans. I use an immersible hand blender to mix the sugar, oil, and vinegar, then toss and marinate. I use fresh cracked pepper and more of it. I stir it occasionally, and marinate it 1-3 days in the fridge before the weekend. I can leave out Sat thru Sun when on our boat.
