Hello, I was wondering if anyone here uses sumac. I am trying to do some Lebanese dishes and I had gotten a jar of 100% ground sumac at a grocery, this is Ziyad brand, and it's going back because it is rancid. I also looked around Amazon, I saw one listed as sumac, no salt. Some of the reviews of many on there are saying things like stale, no flavor, etc. And some of those contain salt.
I looked at World Market and Spice House and they both have sumac with salt. I'm not thrilled about having a spice with salt, I'd like to add my own to taste.
Sumac is supposed to be of a bright citrus flavor. Also, considering my first jar is rancid, I wonder if it spoils easily and needs the salt as some kind of preservative instead of 100% sumac.
So, I wanted to find out if anyone uses sumac and where do they source theirs for a good tasting fresh batch? Any storage tips to prevent spoilage?
