I have tried quite some cheesecakes in the city, including ones from Junior's, Magnolia and Two Little Red Hens, but have yet to find an ideal one. I am looking for one that is extremely rich, thick and heavy (almost rough? with a slightly eggy taste), as I find most that I have tried being too soft, moist, silky, or light for my personal preference (I do enjoy the ultralight Japanese type but that is not what I am looking for at the moment).
Perhaps I shall look more into non-NY cheesecake? (Insights will be highly appreciated.) I would like to be able to devour each bite for a second or two before it melts away. From what I have tried, the slices from Épicerie Boulud seem to be the closest to the ideal consistency/texture that I am looking for.
I usually prefer ones with graham cracker crusts, but I am open to any and all types (cream cheese, ricotta, German, Roman, etc.). I would love to hear as many suggestions as possible from you all. Many thanks in advance!
