This is a bit silly of a question, since the salad is called "Persimmon with Pomegranate Salad" with arugula and hazelnuts. However - I can't find persimmons or pomegranate seeds. So, I'm wondering, what ingredients might be nice subsitutes? The dressing is shallots, pomegranate juice (I have that), sherry and rice vinegars, olive oil, hazelnut oil. Then you are supposed to toss the thin slices of persimmon with the pomegranate seeds and shallots with the dressing, and add a squeeze of lemon juice. I guess my base is the arugula and toasted hazelnuts. I'd prefer not to go the pear/blue cheese route, as we've had a lot of those salads this winter.
