Any suggestions for Christmas main courses that can be made in advance?

This year at Thanksgiving, it was agreed that Grandma and Grandpa are getting too far along to continue hosting family gatherings, so the discussion turned to where Christmas would be hosted. Basically my father and his siblings were all adamantly against hosting it themselves, and convinced/guilt-tripped my sister to agree to host at her home.

But not only is my sister not a cook, her and her husband are vegan, and would have no desire to be directly involved in cooking any meats. So she asked, and I agreed to cook dinner- at least the main dishes. Not the biggest stress, I've cooked Thanksgiving dinner before, and regularly have dinner parties. I've just never done it when travel was necessary and cook time would be slightly limited.

She lives a little over an hour away, and I will probably be working until at least midnight the night before; and the family also decided that early afternoon (1:00pm) worked best for them. So while waking up extra early to properly roast a turkey for hours is a possibility, I would like to find another option.

Long story short, are there any main event style dishes that either: A. reheat incredibly well, or B. can be made in advance with minimum cooking time? Ideally, I'd like to be actively cooking at her house for no more than three hours or so. Doing something like braised beef is the only thing I'm coming up with, but I would really appreciate any suggestions.
