Suggestions for Annual Food Pilgrimage to New York

Well, my birthday is coming up, so the wife and I are going to make our annual trip to the best food city in the world.

Coming from DC, we would ideally like foods that might be hard to find down here, but I am really just looking for singularly wow-worthy food experiences. I have scoured, and scoured, and scoured. We only have the pleasure of visiting once a year, so always go to great lengths to maximize the possibility that we are wowed by the food. One useful thread I found was Nina W.'s thread of 2004 Best Meals.

During last year's pilgrimage, we had appetizers at Blue Hill; a great omakase at Jewel Bako; a memorable lunch at Lupa; and, a hit-or-miss brunch at Spice Market. And, as always, lots of beer at Blind Tiger.

This year, I am considering:

Sumile
Kuma Inn
WD-50
Spotted Pig (to reminisce about the gastro-pubs we enjoyed on last month's London trip)
Prune (for brunch)
Fleur de Sel
Cacio e Pepe
The Modern
Gusto
Tasting Room

and any other suggestions you have that we've never tried

Incidentally, it would have been very hard to resist Bar Tonno if it had not recently closed.
