What would you suggest substituting for vermouth?

I have "all the usual suspects" in the house: dry white/red wine, dry sherry, basic liquors. Would any of that be acceptable?
I have some shrimp and crab left over from New Years and I am making shrimp and crab stuffed cannelloni and a fontina bechamel sauce, which calls for vermouth. Much thanks for any help.
