Sugar Replacement question?!

I also need to make desserts without the use of sugar.

I've only used splenda to sweeten my coffee in the past...

so can I use it for practically anything? I heard it doesn't work for meringues... what CAN I use (if anything) for use in meringues and to make things like flourless chocolate cake, mousses, etc.???

Is there anything else I can use to make a caramel?
