I just got back from 2 weeks in Italy, at the start of truffle season no less. *sigh* Not sure whether to think I was spoiled or ruined! There's lots of things that I'll miss - the amazing cured meats, beautiful arugula, fried zucchini flowers, panini of salami and egg, granita di caffe con panna (wow!) - but the thing I'm pining for the worst is just some really good, FRESH pasta: fettucine, wide egg noodles, ravioli, tortellini. Carb-watching be damned!
I picked up some fresh linguine at Capone's in Union Square to try and I will surely learn to make my own. But in the meantime, what's your favorite for fresh, well-prepared pasta dishes? Via Matta? La Morra? Bricco? Please HELP!
