I want to try a recipe for rabbit which calls for dried morels. Yeeks - couldn't believe the price ($19 for 1/3 of what I'd need)!
Any thoughts on an alternative? I have dried black trumpets, porcini, chanterelles, oyster and a Polish "Forest" mixture of unknown variety. I also have shitake but think they won't be a good option flavor/texture wise.
The recipe calls for a fruity dry white wine, herbes de Provence, pearl onions, garlic, shallots.
