i have a guest coming to thanksgiving dinner who doesn't eat refined sugar. i was planning, as a desert, on making a pumpkin ricotta bake, something similar to a cheesecake. the recipe calls for only half a cup of sugar and i'm wondering if i can substitute honey. i know in cookie or cake baking, you can put in a little less honey, a little extra baking soda, reduce the liquid slightly, but this seems like a different situation. any suggestions?
