Substitutes for nuts (for allergy sufferers)?

My mom is dreadfully allergic to nuts (peanuts, cashews, walnuts, almonds, etc.) but unfortunately, many of the desserts that I like to make include nuts. In some cases, I can omit the nuts without a problem (e.g. like in brownies). However, there are some cookie and candy recipes that call for, say, 3/4 cup of ground almonds which is a fairly significant part of the base of the mixture, and so omitting the nuts would alter the proportions of the recipe. Could you suggest other options for nuts? At this point, all I came up with are soy nuts and chestnuts, which she isn't allergic to. (I realize that this is a broad question, and the "right" answer largely will depend on the recipe itself. I'm open to hearing different ideas and I will try them out.)
