A fish curry i want to make uses lots of fresh grated coconut (250g)
It is blitzed with chilli, fish stock, tamarind, spices to form basis of the curry
I cant easily get hold of fresh coconut - what would you recommend using in its stead. I have a block of creamed coconut in the fridge. Is a lightly reconstituted block of that the nearest Ill get? Or what else would you recommend?
