I'm trying to cut back (or cut out, if possible) on my use of vegetable and canola oil due to environmental concerns. What are the best oils to substitute for them? I realize different oils would make sense depending on the application. So which oils would be best for a) baking b) pan-frying/sauteeing c) deep frying and d) cold applications like salad dressing.
I've heard rice bran oil is good for deep frying. I also have sunflower oil from Trader Joe's that I've been using a lot in place of vegetable oil for pan cooking. Just wasn't sure if that was the best option.
